3 recipe ideas for a dream picnic

For a most exquisite lunch on the grass, the House reveals 3 tasty recipes to enjoy a sunny picnic.
A most gourmet rustic bread
The finest gourmets will be delighted with this generous, gourmet idea! Our warmest thanks to Maïa (@maiacha_) for sharing this delicious rustic bread recipe with Canard-Duchêne, to enjoy with our organic cuvée P181.
To treat yourself, bring :
– A delicious loaf of baker’s bread
– A cheese of your choice, such as Camembert or Reblochon
– A few walnuts, hazelnuts and cashew nuts
– Raw vegetables of your choice: carrots, cucumbers, radishes, cherry tomatoes…
– A few green olives
– Delicate flower honey
– A few thyme leaves
1. Cut out a loaf of rustic bread and hollow it out. Remove enough crumb, like a surprise loaf, to slide in your whole Reblochon or Camembert cheese.
2. Lightly roast the hazelnuts, walnuts and cashews in a frying pan.
3 Add the cheese to the bread and sprinkle with thyme. Replace the top of the loaf, wrap in aluminum foil and bake for 30 minutes at 180°C.
4. Meanwhile, prepare your veggies for a touch of freshness, finely chopping them and cut the olives into strips.
5. Pack everything you need for your picnic, and once you’ve settled in, top your cheese with a drizzle of honey, slices of green olives and nuts.
6. For the tasting, treat yourself! Dip a piece of bread or a carrot stick into your creamy and flavorful cheese.
Enjoy a fresh dip of hummus!
There’s no better way to enjoy a picnic than with a fresh, homemade edamame and pea hummus.
To make this recipe, you’ll need :
– 300 g peas
– 300 g edamame beans
– 1 large lemon
– 2 garlic cloves
– 1 pinch cumin powder
– 1 pinch coriander powder
– 10 g mint, chopped
– 10 g coriander, chopped
– 6 cl olive oil
– Salt and pepper
1. Heat a drizzle of olive oil in a frying pan and cook the edamame and peas for around 8 minutes.
2. While the beans and peas are cooking, peel and finely chop the garlic cloves.
3. Then blend the vegetables in the bowl of a food processor to a thick purée. You can now add your garlic to the mixture.
4. Transfer your mixture to a bowl and add the lemon juice, cumin, coriander powder and olive oil a little at a time. Mix well, season with salt and pepper to taste, then sprinkle with chopped mint and coriander.
5. All that’s left to do is enjoy, with crunchy vegetables, crostini or whatever else comes to mind!
Zucchini and feta cheese: a delicious bite-sized duo
To go with your picnic, we suggest delicious little savory muffins, easy to take away!
You will need:
– 1 medium zucchini
– 1 onion
– 2 eggs
– 60 g feta cheese
– 50 g breadcrumbs
– Half a bunch of basil
– Pinch of Espelette pepper
– Salt and pepper
1. Preheat oven to 220°C.
2. Prepare your vegetables: wash the zucchini and trim the ends. Grate without peeling. Peel and finely chop the onion. Chop the basil and crumble the feta cheese.
3. Mix everything together in a bowl: zucchini, onion, basil, feta, breadcrumbs and eggs. Season with salt and pepper.
4. Once the mixture is homogeneous, divide into small tins.
5. Bake for 10-15 minutes. Depending on the size of your muffin tins, you’ll need to keep an eye on them to make sure they’re golden-brown.
6. Finally, enjoy them hot or cold on your country tablecloth!
